If you are like me than you love Mexican food, and cringe at the calories. Not to fear, Hungry Girl has created a fabulous Whole Enchilada Chicken Soup. It is so easy to make and perfect for a cold night. I am
just mad about this soup!
Ingredients:
3 cups fat free chicken broth
1 1/4 cups finely chopped celery
1/2 cup diced sweet yellow onion
3 cups green enchilada sauce
1 (15 oz) can pure pumpkin
10 oz. cooked chicken breast (I poached my chicken the day before)
1 cup frozen corn (I used the whole bag)
Top with cheese (I used the mexican blend cheese)
In a large pot bring the broth to a boil, add celery and onions and simmer for 5 minutes. Stir in enchilada sauce and pumpkin. Once the soup returns to a low boil add chicken and corn and mix well. Cook for an additional 5 minutes.
Makes 9 cups
